Lightly grease an air fryer baking pan that fits inside the basket.
Combine the oat bran, wheat bran, cream cheese, egg yolks, salt, and black pepper in a mixing bowl.
Stir until the pancake mixture is smooth and evenly combined.
Add one optional protein to the mixture when desired.
Whisk the egg whites in a clean mixing bowl until they form firm peaks.
Gently fold the beaten egg whites into the pancake mixture without knocking out too much air.
Divide the mixture into four equal portions.
Pour one portion into the prepared baking pan and smooth the surface.
Air fry at 180°C (356°F) for approximately 30 minutes until the pancake is firm enough to turn.
Carefully turn the pancake with a silicone spatula.
Air fry for another 5 minutes until golden and completely cooked.
Check that the center reaches at least 74°C (165°F).
Repeat with the remaining portions or cook multiple pancakes together when the air fryer has sufficient capacity.
