A substantial air fryer curd pancake filled with creamy quark, ham, pickles, basil, and chives. Serve it warm or cold for breakfast, brunch, or as an appetizer.
Lightly grease an air fryer baking pan that fits inside the basket.
Whisk the eggs in a large mixing bowl until evenly combined.
Gradually whisk in the skim milk.
Add the flour in several additions while whisking continuously to create a smooth batter.
Stir in the salt, black pepper, and chopped basil.
Fold the creamy quark into the batter until evenly incorporated.
Fold in the baking powder, diced ham, pickles, and chopped chives.
Pour half of the batter into the prepared baking pan to avoid overfilling it.
Place the pan in the air fryer and cook at 180°C (356°F) for 35–40 minutes until firm and golden.
Check that the center reaches at least 74°C (165°F) and a skewer inserted into the center comes out clean.
Remove the pan carefully and let the pancake cool for 10 minutes before unmolding.
Repeat with the remaining batter.
Cut the savory curd pancake into portions and serve warm or cold.

The quantity makes two air fryer batches. Do not fill the baking pan more than two-thirds full because the batter expands during cooking. Variations
