Lightly coat a large baking dish with olive oil cooking spray.
Wash the potatoes thoroughly under cold running water and dry them well.
Cut each potato lengthwise into wedges approximately 2 cm thick.
Pour the extra virgin olive oil into a sealable food bag.
Add the sesame seeds, cumin, kosher salt, garlic powder, and black pepper.
Add the potato wedges and seal the bag securely.
Shake until all the wedges are evenly coated with the seasoning mixture.
Arrange the seasoned potato wedges in a single layer in the prepared baking dish.
Bake for 22 minutes.
Turn the wedges carefully.
Continue baking for another 23 minutes until golden brown, crisp at the edges, and tender inside.
Remove from the oven and allow to cool for 5 minutes.
Serve warm.
