Split the croissants in half and place them in the air fryer basket, working in batches if necessary.
Air fry for 3–5 minutes, until lightly toasted and crisp.
Crack the eggs into a bowl, season with salt and whisk until combined.
Melt a knob of butter in a frying pan over medium-low heat.
Add the eggs and gently scramble until just cooked but still soft and creamy.
Stir 50 g of chopped smoked salmon and a handful of chopped chives through the scrambled eggs.
