Ingredients

Applewood chips
2 cups, soaked
▢
Brown sugar
2 tbsp
▢
Garlic cloves
2 minced

Halibut fillets
4, 6-oz each
▢
Honey
2 tbsp
▢
Rice vinegar
2 tbsp
▢
Sesame oil
1 tbsp
▢
Soy sauce
3 tbsp, gluten-free if needed
▢
Fresh ginger
1 tbsp, grated
▢
Black pepper
1/2 tsp
Instructions
Soak applewood chips in water for at least 30 minutes.
In a bowl, whisk together soy sauce, rice vinegar, honey, brown sugar, sesame oil, minced garlic, and grated ginger.
Place halibut fillets in a shallow dish and pour the marinade over them.
Let marinate for 30 minutes.
Preheat grill to medium-high heat.
Place soaked applewood chips in a smoker box or foil pouch on the grill.
Place halibut fillets on the grill, skin-side down if applicable.
Grill for 6-8 minutes per side, or until fish is cooked through and flakes easily.
Baste with remaining marinade during the last few minutes of grilling.
Remove from grill and serve immediately.

Serve with steamed rice and grilled asparagus.

Pair with a dry Riesling or a crisp Sauvignon Blanc.
