Ingredients

lime juice

2 Tbsp unflavored gelatin

vodka

Nonstick cooking oil spray for molds

Food coloring

Instructions
In a small pan, combine ginger beer and lime juice (and food coloring if desired).
Sprinkle gelatin over the surface of the liquid and allow it to rest for 2 minutes to activate.
Warm the gelatin-ginger beer mixture over medium-low heat for 2 minutes, stirring constantly.
Avoid boiling.
Remove the mixture from heat and stir in the vodka.
Spray your chosen molds with nonstick oil to prevent sticking.
Pour the liquid into the molds of your choice—ice cube trays, sample cups, mini-muffin tins, or sheet pans.
Refrigerate the molds for at least 4 hours, preferably overnight, until the jello shots are completely set.
Remove the jello shots from the molds by sliding around the edges with a thin knife or cutting them into desired shapes if using a sheet pan.
Keep the finished jello shots refrigerated until serving.
Serve cold to enhance the refreshing experience.
