For the ginger-peach puree:

pitted and halved (thin slices reserved for garnish)

Instructions
To make the ginger-peach puree
: In a blender, combine the peaches, fresh ginger, lemon juice, water, and honey.
Blend until smooth.
Adjust sweetness or heat by adding more honey or ginger if desired.
Strain the mixture using a fine strainer to remove solids.
In a cocktail shaker filled with ice, combine the ginger-peach puree and vodka.
Shake well.
Strain the ginger-vodka mixture into a copper mug filled with ice.
Top with ginger beer until the mug is full.
Garnish with thin slices of peach and candied ginger for an extra burst of flavor and elegance.
