Veal Filling
from Veal and Chorizo Turnovers [Tapas]
Instructions
Prepare the Pastry: If necessary, prepare or thaw the puff pastry dough.
Make the veal filling as directed in step 2 of the Veal and Chorizo Turnovers recipe.
Preheat Oven and Shape Pastries: Place an oven rack in the upper-middle position and preheat the oven to 425°F.
Roll out the puff pastry into 2 rectangles, each measuring 25 x 15 inches and about ⅛ inch thick.
Cut each rectangle into 5 rectangles of 5 x 3 inches.
Fill and Seal: Spoon 3 tablespoons of the prepared veal filling lengthwise along the center of each pastry rectangle.
Fold up the sides and ends of the pastry rectangles, pressing gently to seal the edges.
Place the pastries seam side down on a baking sheet.
Bake: Bake in the preheated oven for approximately 15 minutes or until the pastries turn golden brown.
Serve: Enjoy your Aguja de Ternera pastries hot or at room temperature.
