Instructions
In a saucepan, melt the butter over low heat.
Add the onion juice and cook slowly until the onion begins to color.
Stir in the flour and curry powder until smooth.
Gradually add the clear stock and cream, stirring constantly.
Cook the mixture for about 5 minutes, or until thickened and smooth.
Season with salt and pepper to taste.
Cut the hard-boiled eggs into halves lengthwise.
Arrange the egg halves in a serving dish or on individual plates.
Pour the curry sauce over the eggs.
Place the dish on the stove and heat gently for a few minutes until the eggs are thoroughly heated.
Serve the curried eggs on thin squares of toast.
