A crunchy air-fried mixture of cashews, pecans, walnuts and almonds coated with rosemary, thyme, brown sugar and warming spices. Ready in only 11 minutes.
Place the cashews, pecans, walnuts and almonds in a large mixing bowl.
Add the olive oil, brown sugar, rosemary, thyme, kosher salt, ground coriander, onion powder, black pepper and garlic powder.
Toss thoroughly until all the nuts are evenly coated.
Transfer the seasoned nuts to the air fryer basket.
Spread them into an even layer.
Air-fry at 175°C for approximately 6 minutes.
Shake the basket halfway through the cooking time.
Check the nuts frequently during the final 2 minutes to prevent burning.
Remove them when golden brown and fragrant.
Transfer the nuts to a serving bowl.
Allow them to cool for several minutes.
Serve warm.

Serve the cocktail nuts warm with chilled drinks, cheese, olives or other finger foods. Place them in several small bowls so guests can easily share them during a party or movie night.
Recipe Notes
Nuts can brown quickly in an air fryer. Check them regularly during the final minutes and remove them as soon as they become fragrant and golden. They will continue to become crisp while cooling.
Variations
Use any combination of raw nuts totalling approximately 240 g. Add cayenne pepper for heat, smoked paprika for a deeper flavour or maple syrup for a sweeter coating. When using salted, pre-roasted mixed nuts, reduce the salt by half and begin checking them after 4 minutes.
Storage
Allow the nuts to cool completely before transferring them to an airtight container. Store them in a cool, dry place at room temperature for up to one week.
Wine Advice
A dry sparkling wine such as Champagne balances the richness of the nuts and complements the aromatic herbs. A crisp Sauvignon Blanc is a suitable still-wine alternative.
