Preheat the air fryer to 390°F (200°C) for 3–5 minutes.
Combine the soy sauce, olive oil, garlic powder, ginger, black pepper, and salt in a mixing bowl.
Add the pork belly cubes.
Toss until every piece is evenly coated.
Arrange the pork belly in the air fryer basket in a single layer.
Leave space between the pieces for air circulation.
Cook in batches if necessary.
Air fry for 10 minutes.
Shake the basket to turn the pieces.
Brush or drizzle the pork belly with the honey.
Air fry for another 3–5 minutes until caramelized and crisp.
Watch carefully during the final minutes to prevent the honey from burning.
Transfer the pork belly bites to a clean serving plate.
Let them rest for 3 minutes.
Garnish with sesame seeds and chopped green onions if desired.
Serve immediately.
