Sunrise Canadian Bacon Muffins
For a fiery flavor, try Monterey Jack cheese with peppers in place of Swiss.

Makes 15 muffins

6-ounce package Canadian bacon slices, chopped

all-purpose baking mix

3 ounces shredded Cheddar cheese, divided

2 ounces shredded Swiss cheese

chopped fresh parsley

milk

mayonnaise

egg
lightly beaten
Instructions
Melt butter in a large nonstick skillet over medium-high heat.
Add bacon; cook 5 minutes or until browned.
Set aside.
Combine baking mix, ½ cup Cheddar cheese, Swiss cheese, and parsley in a large bowl; make a well in center of mixture.
Add milk, mayonnaise, and egg, stirring just until dry ingredients are moistened.
Stir in bacon.
Spoon into lightly greased muffin pans, filling two-thirds full.
Sprinkle with remaining ¼ cup Cheddar cheese.
Bake at 400° for 20 minutes or until edges are lightly browned.
Remove from pan, and serve warm.
