Instructions
Preheat the air fryer to 180°C (356°F).
Lightly grease an air fryer baking pan that fits inside the basket.
Combine the oat bran, wheat bran, cream cheese, liquid sweetener, egg yolks, and almond milk in a mixing bowl.
Add the vanilla extract, almond extract, or orange blossom water.
Stir until the pancake mixture is smooth and evenly combined.
Whisk the egg whites in a clean mixing bowl until firm peaks form.
Gently fold the whipped egg whites into the bran mixture in three additions.
Divide the batter into four equal portions.
Pour one portion into the prepared baking pan and smooth the surface.
Air fry at 180°C (356°F) for approximately 30 minutes until the pancake is firm enough to turn.
Carefully turn the pancake with a silicone spatula.
Air fry for another 5 minutes until golden and completely cooked.
Check that the center reaches at least 74°C (165°F).
Repeat with the remaining batter or cook multiple pancakes together when the air fryer has sufficient capacity.
Serve the sweet bran pancakes warm or allow them to cool completely.
