Instructions
Peel and dice the sweet potatoes.
Cook or roast until soft.
Chop onion and sauté until soft.
Mix sweet potatoes with onion and seasoning.
Place filling on half of each tortilla.
Add cheese on top.
Fold tortillas over.
Cook on barbecue or pan until golden.
Turn and cook other side.
Serve warm.
