1can15 oz / 425 g mandarin oranges in light syrup, drained
1red bell peppercored, seeded, and diced
¼cupextra virgin olive oil
¼cupsoy sauce or tamari
1tablespoonred pepper flakes
Instructions
Add the edamame, mandarin oranges, red bell pepper, olive oil, soy sauce, and red pepper flakes to a large pot.
Bring to a gentle boil over medium-high heat.
Reduce the heat to low.
Simmer uncovered for 20 minutes until the edamame is tender and the sauce has slightly reduced.
Stir gently before serving.
