Taco-Stuffed Tomatoes combine juicy tomatoes with seasoned ground beef, onion, and garlic. Finished in the air fryer, they offer classic taco flavor without traditional tortilla shells.
Preheat the air fryer to 180°C (356°F) for 3 minutes.
Cut the tops from the tomatoes.
Scoop out the seeds and pulp to create a hollow cavity.
Place the tomatoes upside down on paper towels to drain.
Heat the olive oil in a skillet over medium heat.
Add the onion and cook for 2 minutes.
Add the garlic and cook for 30 seconds.
Add the ground beef and break it apart with a wooden spoon.
Cook for 6–8 minutes until browned and fully cooked.
Drain any excess fat from the skillet.
Stir in the taco seasoning, salt, and black pepper.
Cook for another 2 minutes.
Divide the beef filling evenly among the hollowed tomatoes.
Arrange the stuffed tomatoes in the air fryer basket.
Air fry for 8–10 minutes until the tomatoes are tender.
Transfer the tomatoes carefully to serving plates.
Rest for 2 minutes.
Add the preferred toppings and serve warm.
