Instructions
Heat oil in a skillet over medium heat.
Sauté sliced smoked chicken sausage, zucchini, and corn in oil for about 8 minutes or until vegetables are cooked and heated through.
Stir in black beans, cooked rice, salsa, and chili powder.
Cook, stirring occasionally, for 5 minutes or until the mixture is hot.
Garnish the Tex-Mex Smoked Sausage Skillet with shredded Mexican-blend cheese and chopped fresh cilantro just before serving.
