½cupdried red chiliessoaked in warm water for 15 minutes
1tablespoonbrown sugar or coconut sugar
1tablespoongingerminced
1tablespoonlime juice
2shallotsroughly chopped
2tablespoonsfish sauce or soy sauce for vegan
2tablespoonsvegetable oil
4clovesgarlic
Instructions
Drain the soaked chilies.
Place the chilies, garlic, shallots, and ginger into a food processor or blender.
Blend until a smooth paste forms.
Heat the vegetable oil in a medium saucepan over medium heat.
Add the chili paste.
Cook for 5 minutes while stirring constantly.
Stir in the fish sauce or soy sauce, lime juice, and brown sugar.
Continue cooking for 15 minutes, stirring occasionally, until the paste thickens.
Remove from the heat.
Allow the chili paste to cool completely.
Transfer to an airtight container.
Store in the refrigerator.
