Tomato-Cheese Stuffed Chicken combines juicy chicken breasts with tomatoes, mozzarella, Parmesan, garlic, and basil. Cooked in the air fryer, it makes a flavorful high-protein dinner for four.
Preheat the air fryer to 180°C (356°F) for 3 minutes.
Pat the chicken breasts dry with paper towels.
Combine the tomatoes, mozzarella, Parmesan, garlic, basil, salt, and black pepper in a mixing bowl.
Cut a deep horizontal pocket into the side of each chicken breast.
Do not cut completely through the chicken.
Divide the tomato and cheese filling evenly among the pockets.
Secure each opening with toothpicks.
Lightly coat the chicken breasts with olive oil spray.
Arrange the chicken in the air fryer basket in a single layer.
Air fry for 20–25 minutes.
Turn the chicken carefully halfway through cooking.
Check that the thickest part of the chicken reaches 74°C (165°F).
Transfer the chicken to a clean plate.
Rest for 5 minutes.
Remove every toothpick before serving.

Drain the diced tomatoes thoroughly to prevent excess liquid from escaping into the air fryer basket. Choose chicken breasts of a similar size so they cook evenly. Insert the thermometer into the thickest part of the meat rather than directly into the hot filling.
