Lightly grease an air fryer baking pan that fits inside the basket.
Cut the anchovy fillets into thin strips.
Crack the eggs into a mixing bowl and whisk until evenly combined.
Add the drained tuna, anchovy strips, parsley, and black pepper.
Stir gently until the ingredients are evenly distributed.
Pour the egg mixture into the prepared baking pan.
Place the pan carefully inside the air fryer basket.
Air fry at 180°C (356°F) for 8–10 minutes until the center is set.
Check that the center reaches at least 74°C (165°F).
Carefully remove the pan from the air fryer.
Cut the tuna anchovy omelet into four portions and serve immediately.
