Turkey Meat Loaf

Turkey is very important in Mexican cuisine, but ground turkey meat isn't used as much as ground pork or beef. Perhaps its versatility has not been realized, but it makes a fine Mexican-flavored meat loaf.

Ingredients
Makes 4 servings

ground turkey meat
▢
¼
cup
finely chopped onion
▢

tablespoons
prepared thick and chunky salsa
▢

tablespoon
canned tomato sauce
▢
⅓
cup
bread crumbs
▢
1
tablespoon
chopped fresh parsley
▢
¼
teaspoon
salt
or to taste
▢
Freshly ground pepper
to taste
Instructions
Preheat the oven to 350°.
Grease a 9- × 5-inch loaf pan.
Put all of the ingredients into a large mixing bowl and mix thoroughly.
Form into a loaf and transfer to the pan.
Bake until brown on top and completely cooked through, 45 to 50 minutes.
Let stand 8 to 10 minutes; then slice and serve.
