Combine the almonds, pecans, sunflower seeds, pumpkin seeds, coconut flakes, erythritol, coconut flour, almond flour, vanilla, melted butter, almond butter, and salt in a medium bowl.
Mix thoroughly until all ingredients are evenly coated.
Spoon the mixture into an ungreased round 4-cup oven-safe baking dish.
Place the baking dish in the air fryer basket.
Air fry for 3 minutes.
Stir the granola thoroughly.
Air fry for another 3 minutes until lightly toasted and fragrant.
Transfer the granola to an airtight container.
Allow it to cool uncovered for 10 minutes.
Cover and store at room temperature until ready to serve.
