A hearty vegetarian sausage casserole with tomatoes, beans, roasted red peppers and red wine vinegar. Made entirely in the air fryer, this easy casserole is rich, warming and packed with vegetables.
400gbeansborlotti or cannellini, canned, drained and rinsed
1teaspoon red wine vinegar
1dash Worcestershire sauce
1teaspoon mixed herbsdried
Sea salt flakesto taste
Black pepperfreshly ground, to taste
Instructions
Preheat the air fryer to 180°C.
Cook the vegetarian sausages in the air fryer for 5 minutes.
Toss the red onion with the oil, add it to the air fryer and cook for a further 5 minutes.
Combine the cooked sausages and onion with the chopped tomatoes, roasted red capsicums, beans, red wine vinegar, Worcestershire sauce and mixed dried herbs in a heatproof dish that fits inside the air fryer. Season with sea salt and black pepper.
Cook directly in the air fryer drawer if your appliance is suitable for cooking casseroles without a separate dish.
Cook for 20 minutes, or until the sausages are cooked through and the sauce has thickened slightly.
Serve hot with an extra grinding of black pepper.
