Trim both ends from the onion, remove the outer skin, and cut the onion crosswise into 3/4- to 1-inch-thick slices. Carefully separate the slices into individual rings and discard any thin papery layers.
In a small bowl, combine the garam masala, sweet paprika, curry powder, and kosher salt.
Place the flour, beaten eggs, and panko breadcrumbs in three separate shallow bowls. Divide the spice mixture evenly among the three bowls and mix well.
Dip each onion ring into the seasoned egg mixture, then coat it with flour. Repeat once more with the egg and flour to create a substantial base coating.
Dip the ring into the egg again, then press it into the seasoned panko until completely coated.
