Ingredients

  • 1 1/2 cups orzo pasta uncooked
  • 1 cup asparagus trimmed and cut into bite-size pieces
  • 1 cup cooked medium shrimp
  • 3 green onions thinly sliced
  • 1/2 cup fresh parsley chopped
  • Italian salad dressing to taste

Instructions

  • Cook the orzo according to package directions.
  • Drain and rinse with cold water.
  • Place the asparagus in a large saucepan of simmering water for 3 to 4 minutes.
  • Drain and rinse with cold water.
  • In a serving bowl, mix together the cooked orzo, blanched asparagus, cooked shrimp, sliced green onions, and chopped fresh parsley.
  • Drizzle the salad with Italian salad dressing to taste.
  • Toss the ingredients together until well mixed.
