Ingredients

  • 3/4 lb. ground Italian pork sausage
  • 3 zucchini thinly sliced
  • Salt and pepper to taste
  • 28- oz. can whole tomatoes
  • 1/8 teaspoon sugar
  • 16- oz. pkg. ziti pasta cooked

Garnish:

  • Grated Parmesan cheese

Instructions

  • Brown the Italian pork sausage in a skillet over medium heat; drain, reserving one tablespoon of drippings in the skillet.
  • Add thinly sliced zucchini to the skillet; season with salt and pepper.
  • Sauté until the zucchini is tender and golden, about 10 minutes.
  • Stir in whole tomatoes with their juice and sugar; bring to a boil, breaking up the tomatoes with a spoon.
  • Return the browned sausage to the skillet and reduce heat to low.
  • Cover and cook until heated through, about 5 to 6 minutes.
  • Serve the sausage and zucchini mixture over cooked ziti pasta.
  • Sprinkle with grated Parmesan cheese as a garnish.
