Red Pepper–Garlic Jelly

Ingredients

  • cups finely chopped red bell peppers
  • 3 garlic cloves large, finely chopped
  • ¾ cup apple cider vinegar
  • 3 cups white sugar
  • 1 3-ounce pouch liquid pectin

Instructions

  • In a large saucepan, combine peppers, garlic, vinegar, and sugar.
  • Bring to a full rolling boil, stirring often.
  • Add pectin and bring to a full boil.
  • Boil hard for 1 minute.
  • Remove from heat.
  • Ladle into clean jars and process for 10 minutes in boiling-water bath.

Notes & Wine Advice

These savory jellies call for liquid pectin, sold in bags or pouches. They are available wherever canning supplies are sold.
