Ingredients
- ½ cup dried red chilies soaked in warm water for 15 minutes
- 1 tablespoon brown sugar or coconut sugar
- 1 tablespoon ginger minced
- 1 tablespoon lime juice
- 2 shallots roughly chopped
- 2 tablespoons fish sauce or soy sauce for vegan
- 2 tablespoons vegetable oil
- 4 cloves garlic
Instructions
- Drain the soaked chilies.
- Place the chilies, garlic, shallots, and ginger into a food processor or blender.
- Blend until a smooth paste forms.
- Heat the vegetable oil in a medium saucepan over medium heat.
- Add the chili paste.
- Cook for 5 minutes while stirring constantly.
- Stir in the fish sauce or soy sauce, lime juice, and brown sugar.
- Continue cooking for 15 minutes, stirring occasionally, until the paste thickens.
- Remove from the heat.
- Allow the chili paste to cool completely.
- Transfer to an airtight container.
- Store in the refrigerator.
