Ingredients

- ½ cup hoisin sauce
- ½ cup peanut butter
- 1 tablespoon honey
- 1 tablespoon oyster sauce
- 1 tablespoon sesame oil
- 1 tablespoon water
- 1 teaspoon soy sauce
- 1 teaspoon Vietnamese chili sauce or dried chili flakes
- 2 teaspoons minced ginger
- 2 teaspoons red wine vinegar
For the Chicken
- 1 tablespoon olive oil
- 10 oz boneless skinless chicken breast cut into ¾-inch cubes
For the Pizza
- ¼ cup carrots shredded
- ½ cup bean sprouts
- 2 cups mozzarella cheese shredded
- 2 tablespoons fresh cilantro chopped
- ¼ cup roasted peanuts chopped
- 4 scallions thinly sliced
- Pizza dough
Instructions
- Combine all the peanut sauce ingredients in a medium saucepan.
- Bring to a gentle boil over medium heat.
- Simmer for 1 minute.
- Divide the sauce into two portions.
- Heat the olive oil in a large skillet over medium-high heat.
- Cook the chicken for 5 to 6 minutes until fully cooked.
- Allow the chicken to cool.
- Coat the chicken with part of the peanut sauce.
- Refrigerate until needed.
- Preheat the oven to 245°C (475°F).
- Preheat the pizza stone if using one.
- Roll the pizza dough into a 9-inch circle.
- Spread part of the peanut sauce over the dough, leaving a small border.
- Sprinkle with mozzarella cheese.
- Top with the chicken, scallions, bean sprouts, and carrots.
- Add a little more mozzarella and sprinkle with chopped peanuts.
- Bake for 9 to 10 minutes until the crust is golden and the cheese is bubbling.
- Remove from the oven and garnish with fresh cilantro.
- Repeat with the remaining dough and toppings to make the second pizza.
