Thai Chicken Pizza combines a crispy pizza crust with tender chicken, creamy peanut sauce, mozzarella cheese, crunchy vegetables, and fresh cilantro. Inspired by the famous California Pizza Kitchen favorite, this homemade pizza delivers bold Asian-inspired flavors in every bite.
1teaspoonVietnamese chili sauce or dried chili flakes
2teaspoonsminced ginger
2teaspoonsred wine vinegar
For the Chicken
1tablespoonolive oil
10ozboneless skinless chicken breastcut into ¾-inch cubes
For the Pizza
¼cupcarrotsshredded
½cupbean sprouts
2cupsmozzarella cheeseshredded
2tablespoonsfresh cilantrochopped
¼cuproasted peanutschopped
4scallionsthinly sliced
Pizza dough
Instructions
Combine all the peanut sauce ingredients in a medium saucepan.
Bring to a gentle boil over medium heat.
Simmer for 1 minute.
Divide the sauce into two portions.
Heat the olive oil in a large skillet over medium-high heat.
Cook the chicken for 5 to 6 minutes until fully cooked.
Allow the chicken to cool.
Coat the chicken with part of the peanut sauce.
Refrigerate until needed.
Preheat the oven to 245°C (475°F).
Preheat the pizza stone if using one.
Roll the pizza dough into a 9-inch circle.
Spread part of the peanut sauce over the dough, leaving a small border.
Sprinkle with mozzarella cheese.
Top with the chicken, scallions, bean sprouts, and carrots.
Add a little more mozzarella and sprinkle with chopped peanuts.
Bake for 9 to 10 minutes until the crust is golden and the cheese is bubbling.
Remove from the oven and garnish with fresh cilantro.
Repeat with the remaining dough and toppings to make the second pizza.
