Ingredients

  • 2 teaspoons minced ginger
  • 2 teaspoons red wine vinegar

For the Chicken

  • 1 tablespoon olive oil
  • 10 oz boneless skinless chicken breast cut into ¾-inch cubes

For the Pizza

  • ¼ cup carrots shredded
  • ½ cup bean sprouts
  • 2 cups mozzarella cheese shredded
  • 2 tablespoons fresh cilantro chopped
  • ¼ cup roasted peanuts chopped
  • 4 scallions thinly sliced
  • Pizza dough

Instructions

  • Combine all the peanut sauce ingredients in a medium saucepan.
  • Bring to a gentle boil over medium heat.
  • Simmer for 1 minute.
  • Divide the sauce into two portions.
  • Heat the olive oil in a large skillet over medium-high heat.
  • Cook the chicken for 5 to 6 minutes until fully cooked.
  • Allow the chicken to cool.
  • Coat the chicken with part of the peanut sauce.
  • Refrigerate until needed.
  • Preheat the oven to 245°C (475°F).
  • Preheat the pizza stone if using one.
  • Roll the pizza dough into a 9-inch circle.
  • Spread part of the peanut sauce over the dough, leaving a small border.
  • Sprinkle with mozzarella cheese.
  • Top with the chicken, scallions, bean sprouts, and carrots.
  • Add a little more mozzarella and sprinkle with chopped peanuts.
  • Bake for 9 to 10 minutes until the crust is golden and the cheese is bubbling.
  • Remove from the oven and garnish with fresh cilantro.
  • Repeat with the remaining dough and toppings to make the second pizza.
