Ingredients

  • 500 g baby potatoes halved
  • 5 teaspoons olive oil
  • Sea salt flakes to taste
  • Black pepper freshly ground, to taste
  • 1 tablespoon Dijon mustard
  • 200 g Greek-style yogurt
  • 30 g Parmesan cheese finely grated
  • 1ยฝ cups breadcrumbs soft and white
  • 2 teaspoons mixed herbs dried
  • 1 lemon zested and juiced
  • 1 kg chicken drumsticks
  • 320 g green beans

Instructions

  • Preheat the air fryer to 180ยฐC.
  • Toss the baby potatoes with 2 teaspoons of the olive oil and season with sea salt and black pepper.
  • Cook the potatoes in the air fryer for 20 minutes, tossing halfway through, until tender and golden.
  • Combine the Dijon mustard and Greek-style yogurt in a large bowl and season with sea salt and black pepper.
  • Combine the Parmesan cheese, breadcrumbs, dried mixed herbs and lemon zest in a shallow bowl.
  • Drizzle 1 teaspoon of the olive oil over the breadcrumb mixture, season lightly and toss to combine.
  • Dip the chicken drumsticks into the yogurt mixture, then coat evenly in the breadcrumb mixture.
  • Remove the potatoes from the air fryer and keep warm.
  • Arrange the chicken drumsticks in the air fryer basket and air-fry at 180ยฐC for 20 minutes, turning halfway through.
  • Return the potatoes to the basket with the chicken and cook for a further 5 minutes to heat through and crisp.
  • Toss the green beans with the remaining olive oil and season with sea salt and black pepper.
  • Cook the green beans in a frying pan over medium-high heat for 5 minutes, until lightly browned.
  • Squeeze the lemon juice over the green beans and serve alongside the chicken and potatoes.
