Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 onion chopped
  • 1 lb. ground beef
  • 1/2 lb. ground Italian pork sausage
  • 3 to 4 zucchini quartered and sliced 1/2-inch thick
  • 26- oz. jar spaghetti sauce
  • 14-1/2 oz. can crushed tomatoes
  • 6- oz. can tomato paste
  • 1/2 cup water
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 8- oz. package shredded mozzarella cheese
  • 3 cups elbow macaroni cooked

Instructions

  • In a skillet over medium heat, add olive oil.
  • Sauté garlic and onion until tender, about 5 minutes.
  • Add ground beef and ground Italian pork sausage; cook until browned.
  • Drain any excess fat.
  • Add zucchini, spaghetti sauce, crushed tomatoes, tomato paste, and water.
  • Cover and simmer for 10 to 15 minutes, until the zucchini is tender.
  • Add dried basil, dried oregano, garlic powder, salt, and pepper.
  • Stir to combine.
  • Top the mixture with shredded mozzarella cheese.
  • Serve the Zucchini and Sausage Stovetop Delight over cooked elbow macaroni.
