Ingredients

  • 1/4 cup butter softened
  • 1 teaspoon dill weed
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Optional: 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 2 lbs. sole fillets
  • Garnish:
  • Additional dill weed
  • lemon wedges

Instructions

  • In a small bowl, blend together softened butter, dill weed, onion powder, garlic powder, salt (if using), and white pepper.
  • Transfer the seasoned butter to a cast-iron skillet and heat over medium heat until the butter mixture is melted.
  • Add the sole fillets to the skillet.
  • Cook for 3 to 4 minutes on each side or until the fish flakes easily with a fork.
  • Serve the Dill Butter Sole with additional dill weed and lemon wedges as desired.
