Ingredients
- 2 cups canned coconut milk
- 1 cup brown rice cooked
- ½ cup shredded coconut unsweetened
- ½ cup dark brown sugar firmly packed
- 1 teaspoon kosher salt
- ½ teaspoon ground cardamom
- 8 large Medjool dates pitted and roughly chopped
- ¼ cup heavy cream optional for serving
Instructions
- Preheat the air fryer to 375°F (190°C) for 3 minutes.
- Add the coconut milk, brown rice, shredded coconut, dark brown sugar, kosher salt, ground cardamom, and dates to an 8-inch round baking dish.
- Stir until the ingredients are evenly combined.
- Place the baking dish in the air fryer basket.
- Air fry at 375°F (190°C) for 12 minutes.
- Carefully stir the porridge.
- Continue air frying for 11–13 minutes until thickened and lightly caramelized on top.
- Remove the baking dish carefully from the air fryer.
- Allow the porridge to rest for 5 minutes.
- Divide the porridge among 4 bowls.
- Drizzle with heavy cream if desired.
- Serve warm.
