Breakfast Muffin Fry-Up

Ingredients
- 4 English muffins
- 2 tablespoons unsalted butter softened
- 800 g mushrooms roughly chopped
- Sea salt flakes to taste
- Black pepper freshly ground, to taste
- 2 teaspoons olive oil
- 4 tomatoes halved horizontally
- 8 sausages
- 8 hash browns
- 4 eggs
- 8 bacon rashers
- 800 g baked beans optional
Instructions
- Preheat the air fryer to 180ยฐC.
- Split the English muffins in half. Take one half of each muffin and use a small round cutter or knife to cut a circle from the centre, leaving a 2 cm thick ring.
- Toast both the whole muffin halves and rings in the air fryer for 5โ6 minutes. Remove them and spread butter over the whole muffin halves. Place a toasted ring on top of each one to create a raised border. Set aside.
- Toss the mushrooms with the olive oil and season with sea salt and black pepper.
- Cook the sausages in the air fryer for 4 minutes, until beginning to soften. Add the tomato halves and mushrooms and cook for a further 4 minutes.
- Add the bacon rashers and hash browns and cook for another 4 minutes.
- Place a prepared muffin in a small cup or ramekin. Carefully pour an egg into the centre of the muffin and place it in the air fryer. Repeat with the remaining muffins and eggs.
- Cook for 6 minutes, or until the eggs are cooked to your liking.
- Spoon the mushrooms over the tomatoes. Place the bacon over the sausages and arrange everything in the basket.
- Cook for a final 3 minutes.
- If using baked beans, heat them separately and serve alongside the breakfast.
