A hearty air fryer breakfast with a toasted English muffin, sausage, bacon, mushrooms, tomato and egg. The muffin becomes an edible breakfast basket filled with a soft-cooked egg and served with all the classic fry-up favourites.
Split the English muffins in half. Take one half of each muffin and use a small round cutter or knife to cut a circle from the centre, leaving a 2 cm thick ring.
Toast both the whole muffin halves and rings in the air fryer for 5–6 minutes. Remove them and spread butter over the whole muffin halves. Place a toasted ring on top of each one to create a raised border. Set aside.
Toss the mushrooms with the olive oil and season with sea salt and black pepper.
Cook the sausages in the air fryer for 4 minutes, until beginning to soften. Add the tomato halves and mushrooms and cook for a further 4 minutes.
Add the bacon rashers and hash browns and cook for another 4 minutes.
Place a prepared muffin in a small cup or ramekin. Carefully pour an egg into the centre of the muffin and place it in the air fryer. Repeat with the remaining muffins and eggs.
Cook for 6 minutes, or until the eggs are cooked to your liking.
Spoon the mushrooms over the tomatoes. Place the bacon over the sausages and arrange everything in the basket.
Cook for a final 3 minutes.
If using baked beans, heat them separately and serve alongside the breakfast.
Notes & Wine Advice
Serving Advice
Serve the Breakfast Muffin Fry-Up immediately while the egg is warm and the muffin is still crisp. Add the optional baked beans for a more substantial meal. It is ideal for a leisurely Breakfast or Brunch.
Storage Advice
This dish is best eaten immediately, particularly because of the cooked egg and toasted muffin. Leftover sausages, bacon, mushrooms and hash browns can be cooled and refrigerated separately in airtight containers for up to 2 days. Reheat thoroughly in the air fryer before serving. Wine Advice
If serving this fry-up for brunch, a glass of crisp, sparkling Cava is a surprisingly good match. Its fresh acidity and bubbles cut through the richness of the bacon, sausage and egg while refreshing the palate between bites.
