  • 3 zucchini about 650 g, grated
  • Sea salt flakes to taste
  • Black pepper freshly ground, to taste
  • 75 g feta cheese crumbled
  • 4 green onions finely sliced
  • 15 g fresh parsley finely chopped
  • 10 g fresh dill finely chopped
  • 3 tablespoons plain flour
  • 1 egg
  • ยฝ cup breadcrumbs
  • Vegetable or sunflower oil for air-frying
  • Yogurt drizzled with olive oil, to serve

Instructions

  • Place the grated zucchini in a large bowl and sprinkle with 1 teaspoon sea salt. Mix well and set aside for 1 hour.
  • Transfer the zucchini to a colander and drain. Wrap it in a clean kitchen towel and squeeze out as much liquid as possible. Return the zucchini to a clean bowl.
  • Combine the feta cheese, green onions, parsley and dill in a small bowl. Sprinkle over the flour and toss well. Season with black pepper.
  • Add the egg and breadcrumbs and mix to combine.
  • Shape the mixture into eight fritters and arrange them on an air fryer tray. Brush both sides lightly with oil.
  • Preheat the air fryer to 180ยฐC.
  • Arrange the fritters in a single layer and air-fry for 12 minutes. Turn and air-fry for a further 5โ€“8 minutes, until golden and firm. Cook in batches if necessary.
  • Serve warm with yogurt drizzled with olive oil.
