Crispy zucchini and feta fritters made in the air fryer with fresh herbs, garlic and breadcrumbs. Golden on the outside, tender inside and delicious served with a simple yogurt drizzle.
Place the grated zucchini in a large bowl and sprinkle with 1 teaspoon sea salt. Mix well and set aside for 1 hour.
Transfer the zucchini to a colander and drain. Wrap it in a clean kitchen towel and squeeze out as much liquid as possible. Return the zucchini to a clean bowl.
Combine the feta cheese, green onions, parsley and dill in a small bowl. Sprinkle over the flour and toss well. Season with black pepper.
Add the egg and breadcrumbs and mix to combine.
Shape the mixture into eight fritters and arrange them on an air fryer tray. Brush both sides lightly with oil.
Preheat the air fryer to 180°C.
Arrange the fritters in a single layer and air-fry for 12 minutes. Turn and air-fry for a further 5–8 minutes, until golden and firm. Cook in batches if necessary.
Serve warm with yogurt drizzled with olive oil.
