Sopa de Chayote
Pale green pear-shaped chayote, indigenous to Mexico, is a type of squash that's now available almost everywhere in the United States. It's often used in the same way as summer squash. The delicate flavor of the chayote takes well to a bit of spicy seasoning, as in this soup.

Ingredients

Makes 4 servings

Instructions

  • Cook the chayote in a pan of boiling salted water to cover, until tender, 30 to 40 minutes.
  • Cool under cold running water.
  • Peel and discard the thin outer skin.
  • Slice the chayotes crosswise, and reserve in a blender or food processor.
  • In a large saucepan, heat the oil and butter over medium heat and cook the onion until softened, 3 to 4 minutes.
  • Add the oregano, red pepper, broth, zucchini, jalapeño, cilantro, and masa harina.
  • Bring to a boil, reduce the heat to low, cover and simmer until the zucchini is tender, about 10 minutes.
  • Transfer the soup to a the blender or food processor with the chayote and purée until smooth.
  • Return the soup to the pan and bring to a boil, over medium-low heat, stirring frequently, and cook 3 to 4 minutes.
  • Season with salt.

Notes & Wine Advice

Serve hot with a swirl of crema on top.

Ingredients

Makes 4 servings

Instructions

  • In a large saucepan, heat the oil over medium heat.
  • Add the onion, garlic, and oregano.
  • Stir to coat with oil.
  • Cover and cook on low heat 5 minutes.
  • Add the chopped chiles, tomatillos, cilantro, and chicken broth.
  • In a small bowl mix the masa harina with about 2 tablespoons broth and stir into the soup pot.
  • Bring the soup to a boil; then reduce the heat and simmer, partially covered, until the tomatillos are soft, 12 to 15 minutes.
  • Season with salt and pepper.
  • Transfer the soup to a blender or food processor and purée until smooth.
  • Return the soup to the pan and bring to a boil, over medium-low heat, stirring frequently, until steaming hot, 3 to 4 minutes.

Notes & Wine Advice

Serve hot, drizzled with crema.

Women in Mexico's public markets can often be seen sitting surrounded by a pile of fresh pea pods, efficiently, almost rhythmically, releasing bright green peas from pod after pod.In the Yucatán region of Mexico, peas are scattered as a garnish over a number of typical dishes. In Mexico City, peas show up in creamy smooth soups like this one.This soup is best made with fresh peas, although still tasty made with frozen. The red pepper sauce is an optional garnish but adds a lively touch of color and flavor.

  • Then, in a medium saucepan, heat the oil over medium heat.

Fresh asparagus is often served in upscale Mexican restaurants in urban areas such as Mexico City. Although not native to the region, asparagus is grown in Mexico and even imported into the United States during part of the year, so it's not surprising that Mexicans enjoy it just as we do. To make this soup, asparagus is cooked in chicken broth until very tender, then blended smooth. For a bright touch, garnish the soup with strips of canned pimiento, or finely diced, fresh red bell pepper, if you wish.

  • Cut or break off the tough ends of the asparagus.
  • Chop the remaining asparagus spears into 1⁄2-inch pieces.
  • Melt the butter in a large saucepan, and cook the onion, covered, stirring frequently, until limp, about 3 minutes.
  • Add the chicken broth and asparagus.
  • Bring to a boil, then reduce the heat, cover, and cook until the asparagus is very tender, about 15 minutes.
  • Stir in the tortilla pieces and cream.

Crema de Garbanzo
Mexicans uses chickpeas, which they call garbanzos, in a variety of dishes. This flavorful soup is like one my husband and I had in Oaxaca. Make the soup with canned beans, or with cooked dried beans (see Basic Chickpeas). Mexican cooks rub the thin skins off the cooked beans to make the texture of the soup creamier. I have found it to be quite easy to do; but if you are short on time or prefer the health benefit of extra fiber from the skins, leave them on.

  • In a medium saucepan, melt the butter over medium heat, and cook the onion, carrot, and garlic, stirring often, 5 minutes.
  • Add the cumin, salt, and crushed pepper.

  • 2 tablespoons olive oil or vegetable oil
  • ½ medium onion chopped
  • 2 medium garlic cloves chopped
  • 2 medium carrots thinly sliced
  • 2 cups cooked chickpeas garbanzo beans, canned or homemade
  • 1 large ripe tomato peeled and chopped
  • 1 tablespoon coarsely chopped fresh flat-leaf parsley
  • 1 151⁄2-ounce can fat-free reduced-sodium chicken broth

Cumin and a touch of crushed hot red pepper add flavor, and the potato gives a creamy quality to this smooth and simple carrot soup from Chihuahua in northern Mexico, the state of the incredible Copper Canyon and home of the Tarahumara Indians. The soup is special enough for entertaining.

Creamy Onion and Meatball Soup

Crema de Cebolla con Albondigas
There is no cream in this unique puréed soup adapted from a cookbook, by George C. Booth. He wrote that the soup originated in the city of Puebla and was called Sopa de Crema. My version is slightly different, in that I sauté the onions before boiling them to enhance the flavor, I use a mixture of ground beef and pork for the meatballs, and add to thicken the broth. The soup is unusual and quite delicious.

Ingredients

Makes 4 to 6 servings

Instructions

  • In a small bowl soak the bread in the milk and mash with a fork.
  • Mix in the beaten egg.
  • With clean hands, mix in the meat, oregano, salt, and pepper.
  • Form into small (about 1-inch) meatballs.
  • Reserve on a plate.
  • In a large saucepan, melt the butter over medium heat.
  • Add the onions and cook, stirring, 2 minutes.
  • Add 1 cup of water, cover, reduce heat to low, and simmer until the onions are very tender, about 15 minutes.
  • Transfer the onion mixture to a blender or a processor.
  • Add the masa harina and 2 cups of the chicken broth.
  • Purée until smooth.
  • Return the soup to the saucepan.
  • Add the remaining 2 cups of chicken broth.
  • Bring to a boil.
  • Drop in the meatballs and parsley.
  • Cook, partially covered, stirring occasionally, until the meatballs are completely cooked through, 18 to 20 minutes.
  • Adjust seasoning.
  • Stir in the sherry.
