Ensalada de Noche BuenaThis is a stunning traditional salad that's usually served as part of a joyful meal after mass on Christmas. The salad is also on tables at parties after posadas—re-enactments of Mary and Joseph seeking shelter in Bethlehem for the birth of the baby Jesus—or for any special occasion meal during the Christmas season.Some versions of the salad also include sugar cane sticks, peeled and cut into chunks or chopped to garnish the salad. The bright combination of fruits and vegetables are most spectacular when artfully arranged on a large platter. Pair with Spanish-Style Salt Cod, which is often eaten in Mexico during the holiday season.

Ingredients

Makes 6 servings

  • 4 small fresh beets about 1 pound
  • ½ medium jicama peeled and finely diced
  • ½ fresh pineapple peeled and cut into 3⁄4-inch pieces
  • 2 medium oranges peeled and cut into 3⁄4-inch pieces
  • 1 medium banana peeled and cut into 3⁄4-inch pieces
  • 6 large romaine lettuce leaves finely shredded
  • 2 medium red apples halved, cored and thinly sliced
  • ½ cup pomegranate seeds
  • cup chopped dry-roasted peanuts
  • ¼ cup olive oil or vegetable oil
  • 1 tablespoon fresh lime juice
  • 2 teaspoons unseasoned rice vinegar
  • ½ teaspoon sugar
  • ¼ teaspoon salt

Instructions

  • Put the beets in a medium saucepan.
  • Add water to cover and bring to a boil over medium heat.
  • Cook, covered, until tender when pierced with the tip of a sharp knife, about 30 minutes.
  • Drain and rinse under cold water to cool.
  • Peel and slice the beets about 1⁄4-inch thick.
  • The beets can be cooked ahead, covered, and refrigerated until you are ready to assemble the salad.
  • In a large bowl gently mix the jicama, pineapple, oranges, and banana.
  • On a large serving platter, arrange a bed of lettuce.
  • Mound the jicama and fruit salad in the center of the platter.
  • Make a ring of overlapping apple slices around the salad.
  • Make a ring of overlapping beet slices around the apples.
  • The shredded lettuce should be visible as the outside ring around the edge of the plate.
  • Sprinkle peanuts and pomegranate seeds over all.
  • In a small bowl, whisk together the oil, lime juice, vinegar, sugar, and salt.
  • Drizzle over the entire salad and serve.

Spanish-Style Salt Cod

The Spanish brought dried cod to Mexico in the 1500s. Mexican cooks adopted the fish into local preparations, and it is now a tradition in Mexico to serve this classic dish from the Basque region of Spain, the day after Christmas. In Oaxaca, the dish is called Bacalao Navideño, where it's served on Christmas Eve.In the United States, dried salt cod can be found in many supermarkets, and in Italian or Latin-American markets. It's essential to soak the salt cod in cold water for many hours, changing the water several times to remove the saltiness and the strong smell. If the fish has been heavily salted and is hard as a board, it will take 20 to 24 hours to soften. A lightly cured fish will be a bit flexible and will soften in about 12 hours. If properly prepared, salt cod is excellent and worth the effort.

Ingredients

  • 1 pound salt cod
  • 2 tablespoons olive oil
  • 1 medium onion finely chopped
  • 3 large garlic cloves finely chopped
  • 3 medium tomatoes peeled and finely chopped
  • ¼ teaspoon dried crushed red pepper
  • 2 tablespoons dry sherry
  • 4 small red potatoes about 1 pound, boiled, peeled, and quartered
  • ¼ cup finely chopped parsley
  • 8 pimiento-stuffed green olives cut in half crosswise
  • 3 jarred pickled jalapeño chiles en escabeche, seeded and cut into thin strips

Instructions

  • Put the cod in a nonmetal bowl.
  • Cover with water and soak (covered) 12 to 24 hours, changing the water 3 to 4 times until the fish is reconstituted.
  • Drain and cut the fish into 4 pieces.
  • Put the fish in a 3-quart saucepan, cover with water and bring to a boil.
  • Cook 1 minute.
  • Drain.
  • Remove and discard skin and bones.
  • Shred the fish and reserve in a bowl.
  • In a large skillet, heat the oil over medium heat and cook the onion and garlic until they start to brown, about 3 minutes.
  • Add the tomatoes, crushed pepper and sherry.
  • Bring to a boil and cook, stirring frequently, until the sauce thickens, 4 to 5 minutes.
  • Add the cod and the remaining ingredients.
  • Bring to a boil; then reduce heat to low, cover and simmer 20 to 25 minutes, or until the fish is tender.

  • cups fresh or canned pineapple chunks well drained and cut in half (see Note)
  • 1 jalapeño chile seeded, veins removed, and finely chopped

  • 2 tablespoons olive oil
  • ½ teaspoon salt or to taste

Instructions

  • In a large bowl, mix the jicama, carrots, pineapple, and jalapeño.
  • In a small bowl, whisk together the lime juice, oil, and salt.
  • Pour over the salad and toss to coat.
  • Refrigerate at least an hour.

Note:
To prevent too much juice from accumulating in the salad, add the pineapple just before serving.

  • ½ large cucumber peeled, halved, and thinly sliced

The town of Guanajuato tumbles along a deep gorge in the rugged mountains of central Mexico that once supplied precious minerals. Now this lovely little colonial city in central Mexico is known for its music festivals. The small plaza, Jardin de la Union, shares a pleasant flat area with a few sidewalk cafes, hotels, and shops. From every direction, steep winding streets descend into the plaza.In a charming sidewalk café I had this salad with its unusual combination of ingredients. It was served with a sweet mayonnaise dressing, but I prefer a vinaigrette. For convenience or a different flavor, you can substitute raisins for the pomegranate seeds.
