Many Mexican chefs in the United States have brought the spirit of innovation to Mexican cooking traditions with great success. Near the historic square in Sonoma, California, is Maya, a lively contemporary Mexican restaurant notable for both its traditional and imaginative Mexican dishes. This simple cabbage slaw is the creation of Chef Manual Arjona from Yucatán, a state at the tip of southern Mexico. The salad is topped with Pan-Roasted Tomatillo Sauce.

Instructions

  • Prepare the sauce.
  • Then, in a medium bowl toss all of the ingredients together.
  • Add salt, if needed.
  • Transfer to 4 serving plates, stacking each salad in a pile.
  • Crown each salad with about 2 tablespoons salsa on top.

Bits of fried tortillas, called migas, and grated cheese appear in this unique cabbage salad that I created for a cooking class—and it was a huge success. Oaxaca cheese is now available in many supermarkets or Mexican markets. If you can't find it, substitute mozzarella.

Ingredients

Makes 4 servings

  • Vegetable Oil for frying
  • 3 corn tortillas cut into 1⁄2-inch squares
  • ½ large head cabbage finely shredded
  • 1 cup coarsely shredded Oaxaca cheese
  • ¼ cup lightly packed chopped fresh cilantro
  • 1 large ripe tomato chopped
  • 2 green onions finely chopped
  • 1 jarred pickled jalapeño chile en escabeche, seeded, veins removed, and finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon unseasoned rice vinegar
  • ½ teaspoon salt or to taste
  • teaspoon freshly ground pepper or to taste

Instructions

  • In a small skillet pour oil to a depth of about ½ inch and heat over medium heat until it shimmers.
  • Fry the tortilla squares in batches until crisp and golden brown.
  • Remove with a slotted spoon and drain on paper towels.
  • Set aside.
  • Put all of the remaining ingredients in a large bowl.
  • Add the fried tortillas and toss everything together.
  • Serve at once.

In a small cooking school in Leon, Mexico, north of Mexico City, I learned the rudiments of Mexican cooking 25 years ago. Daily hands-on lessons from native instructors were intensive and thorough. The school no longer exists, but I still teach and use many of the recipes, including this simple cabbage salad.

Ingredients

Makes 4 servings

  • 4 cups finely shredded cabbage
  • 2 medium carrots peeled and shredded
  • ½ cup cooked thawed frozen or fresh peas
  • 1 to 2 serrano chiles minced with seeds
  • 1 large avocado Hass variety preferred, peeled and cut into 1⁄4-inch dice
  • 3 tablespoons fresh lime juice
  • 2 tablespoons mayonnaise
  • ½ teaspoon salt or to taste
  • ¼ teaspoon freshly ground pepper or to taste

Instructions

  • In a medium bowl, toss the cabbage, carrots, peas, and serrano chiles together.
  • In a small bowl, gently mix the avocado, lime juice, mayonnaise, salt, and pepper.
  • Add to the cabbage mixture, and stir thoroughly to combine.
  • Refrigerate for at least an hour.

Elena Zelayeta, author or Elena's Secrets of Mexican Cooking, was born in Mexico, but spent most of her life in San Francisco where she became known for her wonderful Mexican food. Her recipe for this beautiful salad made of mostly green ingredients was my inspiration. I've been making my version of her salad for more than thirty years. I omit raw onion, use fresh green chiles instead of canned, and use my own vinaigrette.

Ingredients

Makes 4 servings

  • Basic Vinaigrette
  • 2 tablespoons olive oil
  • 4 medium 1 pound zucchini, thinly sliced
  • 2 poblano or Anaheim chiles roasted, peeled and cut into thin strips or squares
  • 1 large avocado Hass variety preferred, peeled and cubed
  • 8 pimiento-stuffed green olives sliced crosswise
  • Salt and freshly ground pepper to taste
  • Romaine lettuce shredded or chopped
  • cup crumbled queso fresco fresh Mexican cheese

Instructions

  • Prepare the vinaigrette, then heat the oil in a large nonstick skillet and sauté the zucchini, until crisp-tender and still bright green, about 2 minutes.
  • Transfer to a large bowl.
  • Refrigerate about 15 minutes, then add to the bowl the chile strips, avocado, and pimientos.
  • Add the pepper and about 2 tablespoons vinaigrette.
  • Toss to coat the salad.
  • Add salt, if needed.
  • Make a bed of lettuce on a serving platter.
  • Mound the salad on the lettuce.
  • Sprinkle crumbled cheese on top.

Instructions

  • Cut the carrots and zucchini on the bias into oval slices about ¼ inch thick.
  • Cut each oval in half lengthwise.
  • Bring to a boil 1 cup of water in a medium nonstick skillet, and cook the carrots, covered, until barely tender, about 2 minutes.
  • With a slotted spoon, remove the carrots to a large bowl and set aside.
  • In the same skillet, cook the zucchini, uncovered until crisp-tender, about 1 minute.
  • Drain and add to the bowl of carrots.
  • Cool about 5 minutes.
  • Stir in the oil, lime juice, mint, salt, and pepper.

Ancho chiles make a rich red sauce that ranges from mild to quite hot. The savory sauce served with smoky-tasting barbecued chicken breasts is a winning combination. If possible, grill the chicken over white-hot coals of mesquite charcoal for authentic flavor. Serve with Mexican-style beans and salad.

  • Prepare the chile sauce and reserve.
  • Then, make a hot fire in an outdoor grill or, alternatively, preheat an oven broiler or stovetop grill pan.
  • Lay the chicken breasts on a platter.
  • In a small bowl, mash the garlic, salt, oil, and pepper together to make a paste.
  • Rub the mixture all over the chicken.
  • When the outdoor grill fire, broiler, or grill pan is hot, grill the chicken, turning once or twice, about 4 to 5 minutes per side, or until well marked from the grill and no longer pink inside at the thickest part.
  • To serve, reheat the sauce, spoon over the grilled chicken, and sprinkle with the chopped cilantro.

No Name Restaurant is a well-known eatery in charming Tlaquepaque, a suburb of Guadalajara. If you go, it's a cinch to find by asking any merchant along the pedestrian-only main street of shops and restaurants in this restored colonial town. Legend has it that the original owners were selling liquor illegally and didn't want a sign out front, so people were directed to "that place behind the high wall over there without a name." When alcohol became legal the name stuck, and now a very small sign is posted on the exterior wall. The food at No Name is creative, with some unusual selections. I liked the zucchini boat salad and here it is, my way.

Ingredients

  • 4 medium zucchini
  • 2 teaspoons olive oil
  • ¼ teaspoon salt or to taste
  • Classic Guacamole
  • 2 large ripe tomatoes seeded and diced
  • 2 tablespoons crumbled cotija cheese or queso fresco fresh Mexican cheese

Instructions

  • Slice the zucchini in half lengthwise.
  • Scoop out the centers with a melon ball scoop, leaving a 1⁄2-inch edge.
  • (Save the centers for another use.
  • ) Brush the zucchini on both sides with olive oil and sprinkle lightly with salt.
  • Heat a large nonstick skillet over medium heat and cook the zucchini, cut side down, for about 2 minutes.
  • Turn and cook 2 to 3 more minutes.
  • The zucchini will still be slightly crisp and bright green.
  • Remove to a plate.
  • Cool.
  • Prepare the guacamole.
  • Then, when the zucchini are completely cool, fill the centers with guacamole.
  • (Reserve extra guacamole.
  • ) Put 2 halves in the center of each of 4 serving plates.
  • Surround with diced tomato.
  • Sprinkle crumbled cheese over all.

Zucchini in a light marinade with fresh oregano makes a colorful and appetizing single-ingredient salad presented in the nueva cocina style—with the slices decoratively overlapping on a serving plate. Of course, if you're in a hurry, this can be a fabulously fast and delicious dish to make; just put the cooked slices in a bowl and mix with the dressing. It may not look as striking, but the flavors are still wonderful. Fresh oregano is key here, so reserve this recipe for when you can find it, instead of substituting dried oregano. If cotija cheese is not available, mild feta can be used.

  • 4 medium about 1 pound zucchini of uniform size
  • 2 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • ¼ teaspoon salt
  • teaspoon freshly ground pepper or to taste
  • 2 tablespoons finely chopped fresh oregano leaves
  • 2 tablespoons crumbled cotija cheese

Instructions

  • Trim the zucchini, then cut it crosswise on the bias into 1⁄4-inch thick slices.
  • Heat 1 tablespoon of the oil in a large nonstick skillet.
  • Cook the zucchini in a single layer, in batches, turning once, until crisp tender with bright green edges, about 2 to 3 minutes.
  • Remove to a bowl, and cool 10 minutes.
  • To the bowl add the remaining oil, and the vinegar, salt, pepper, and oregano.
  • Mix gently to coat the zucchini.
  • On a serving plate, arrange the zucchini in an overlapping pattern.
  • Top with the crumbled cheese.
  • Serve at room temperature.
