  • 1 shallot chopped
  • 2 garlic cloves minced
  • 2 bell peppers sliced
  • 1 carrot trimmed and sliced
  • 1/2 pound ground pork
  • 1/2 pound smoked pork sausage sliced
  • 2 ripe medium-sized tomatoes pureed
  • 2 tablespoons ketchup
  • 1/4 cup red wine
  • 2 tablespoons cilantro leaves chopped
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and ground black pepper to taste
  • 1 package 16-ounce tagliatelle

Instructions

  • Heat olive oil in a baking pan at 380°F (193°C) in the air fryer.
  • Add chopped shallots and sauté for about 4 minutes until tender.
  • Add minced garlic, sliced bell peppers, and carrot slices to the pan.
  • Cook for an additional 2 minutes, stirring frequently.
  • Stir in ground pork and sliced smoked sausage.
  • Continue cooking for 5 minutes, breaking up the pork with a spatula as it cooks.
  • Add tomato puree, ketchup, red wine, cilantro, basil, oregano, salt, and black pepper.
  • Cook for 4 to 6 minutes, stirring occasionally, until the sauce is heated through and fragrant.
  • Meanwhile, bring a large pot of lightly salted water to a boil.
  • Cook tagliatelle according to the package instructions (10 to 12 minutes), then drain well.
  • Plate the tagliatelle and ladle the rich ragu sauce over the top.
  • Serve immediately and enjoy this classic Italian dish.
