Instructions
Heat olive oil in a baking pan at 380°F (193°C) in the air fryer.
Add chopped shallots and sauté for about 4 minutes until tender.
Add minced garlic, sliced bell peppers, and carrot slices to the pan.
Cook for an additional 2 minutes, stirring frequently.
Stir in ground pork and sliced smoked sausage.
Continue cooking for 5 minutes, breaking up the pork with a spatula as it cooks.
Add tomato puree, ketchup, red wine, cilantro, basil, oregano, salt, and black pepper.
Cook for 4 to 6 minutes, stirring occasionally, until the sauce is heated through and fragrant.
Meanwhile, bring a large pot of lightly salted water to a boil.
Cook tagliatelle according to the package instructions (10 to 12 minutes), then drain well.
Plate the tagliatelle and ladle the rich ragu sauce over the top.
Serve immediately and enjoy this classic Italian dish.
