Ingredients
- 8 cups chopped peeled tomatoes
- 2 cups chopped onion
- 1 cup chopped green peppers
- 8 jalapeño peppers chopped*
- 3 cloves garlic peeled and minced
- 1 6-ounce can tomato paste
- ¾ cup apple cider vinegar
- ¼ –½ cup finely chopped cilantro
- ½ teaspoon ground cumin
Instructions
- Combine all ingredients in a large saucepan.
- Bring to a boil, stirring constantly.
- Reduce heat and simmer for 30 minutes, or until thickened.
- Ladle hot salsa into clean jars.
- Process for 20 minutes in boiling-water bath.
Notes & Wine Advice
*Wear rubber gloves when chopping hot peppers to avoid skin irritation.
