Ingredients

  • 7 cups chopped tomatoes
  • 2 cups chopped cucumbers
  • 2 cups chopped banana peppers
  • 1 cup chopped onion
  • ½ cup chopped jalapeño peppers*
  • ½ cup apple cider vinegar
  • ¼ cup packed finely chopped cilantro
  • 1 tablespoon oregano
  • 1 teaspoon salt

Instructions

  • Combine all ingredients in a medium saucepan.
  • Bring to a boil, stirring often.
  • Boil gently for 10–15 minutes, or until thickened.
  • Ladle into clean jars.
  • Process for 15 minutes in boiling-water bath.

Notes & Wine Advice

*Wear rubber gloves when chopping hot peppers to avoid skin irritation.
