Ingredients
- 6 cups chopped tomatoes
- 3 cups grated carrots
- 1½ cups apple cider vinegar
- 1¼ cups brown sugar
- ½ cup chopped onion
- ¼ –½ cup chopped jalapeño peppers*
- 1½ teaspoon salt
- ½ teaspoon black pepper or to taste
- ¼ cup chopped cilantro optional
Instructions
- Combine all ingredients except cilantro (if using).
- Bring to a boil over medium heat, stirring occasionally.
- Boil gently until thickened, approximately 45 minutes.
- Ladle into clean jars.
- Process in boiling-water bath for 15 minutes.
- Note: This salsa is almost a relish and is delicious served with meats or on crackers or chips.
Notes & Wine Advice
*Wear rubber gloves when chopping hot peppers to avoid skin irritation.
