Ingredients
- 6 cups peeled chopped peaches
- ½ cup white vinegar
- 1¼ cups chopped onion
- 4 jalapeño peppers chopped*
- 1 red bell pepper chopped
- ½ cup finely chopped cilantro
- 1 clove garlic finely chopped
- 1½ teaspoons cumin
- ½ –1 teaspoon cayenne pepper to taste
Instructions
- Place chopped peaches into bowl with vinegar to prevent browning.
- Add remaining ingredients.
- Bring to a boil over medium heat.
- Boil gently until thickened, approximately 10–15 minutes.
- Ladle into clean jars.
- Process for 15 minutes in boiling-water bath.
Notes & Wine Advice
*Wear rubber gloves when chopping hot peppers to avoid skin irritation.
