Ingredients

  • 1 cup vinegar
  • 8 cups peeled chopped pears
  • 3 red bell peppers chopped
  • 3 green bell peppers chopped
  • 1 cup sugar
  • 2 tablespoons salt
  • 2 teaspoons ground mustard
  • 1 teaspoon turmeric
  • ½ –1 teaspoon black pepper to taste

Instructions

  • Combine vinegar and chopped pears to prevent browning.
  • Combine pears and vinegar with remaining ingredients in a medium saucepan.
  • Bring to a boil over medium heat.
  • Boil gently until thickened, approximately 10–15 minutes.
  • Ladle into clean jars.
  • Process for 20 minutes in boiling-water bath.
