Ingredients
- 4 large fresh ears corn
- 1 cup chopped onion
- 1 cup chopped red or green bell peppers
- 1 cup chopped tomatoes
- 1 fresh jalapeรฑo pepper seeded and chopped*
- ยฝ cup lime juice
- ยฝ โ1 teaspoon salt to taste
- ยฝ teaspoon ground cumin
- ยฝ โ1 teaspoon black pepper to taste
Instructions
- Remove husks from corn, rinse, and cut kernels from cobs.
- In a large saucepan, combine 2 cups corn kernels along with other ingredients.
- Bring to a boil and simmer for 10 minutes.
- Ladle into clean jars.
- Process in boiling-water bath for 15 minutes.

*Wear rubber gloves when chopping hot peppers to avoid skin irritation.
