Ingredients

  • 4 large fresh ears corn
  • 1 cup chopped onion
  • 1 cup chopped red or green bell peppers
  • 1 cup chopped tomatoes
  • 1 fresh jalapeรฑo pepper seeded and chopped*
  • ยฝ cup lime juice
  • ยฝ โ€“1 teaspoon salt to taste
  • ยฝ teaspoon ground cumin
  • ยฝ โ€“1 teaspoon black pepper to taste

Instructions

  • Remove husks from corn, rinse, and cut kernels from cobs.
  • In a large saucepan, combine 2 cups corn kernels along with other ingredients.
  • Bring to a boil and simmer for 10 minutes.
  • Ladle into clean jars.
  • Process in boiling-water bath for 15 minutes.

Notes & Wine Advice

*Wear rubber gloves when chopping hot peppers to avoid skin irritation.

Ingredients

  • 6 onions
  • 6 cucumbers
  • 6 green bell peppers
  • 12 green tomatoes
  • 5 cups white sugar
  • 3 tablespoons salt
  • 2 cups vinegar
  • 2 cups prepared mustard
  • 1 tablespoon turmeric
  • 2 tablespoons celery seed

Instructions

  • Grind or chop vegetables, then drain in colander for 1 hour.
  • In a large saucepan, combine drained vegetables with sugar, salt, and vinegar.
  • Boil for 15 minutes.
  • Add remaining ingredients and boil for 5 more minutes.
  • Ladle into clean jars.
  • Process in boiling-water bath for 10 minutes.

Ingredients

  • 6 large onions

  • ยผ cup salt
  • 2 cups white vinegar
  • 2 cups water
  • 6 cups sugar
  • 1 tablespoon prepared mustard
  • 1 teaspoon turmeric

Instructions

  • Finely chop or grind onions, tomatoes, and peppers.
  • Sprinkle with ยผ cup salt.
  • Allow to rest for 3 hours.
  • Drain vegetable mixture well.
  • Add vinegar and water to vegetables.
  • Bring to a boil and continue boiling for 15 minutes.
  • Add sugar, mustard, and turmeric.
  • Boil for 5 more minutes, stirring often.
  • Ladle into clean jars.
  • Process for 10 minutes in boiling-water bath.

Notes & Wine Advice

This spread is delicious mixed with mayonnaise!

Ingredients

  • 1 cup vinegar
  • 8 cups peeled chopped pears
  • 3 red bell peppers chopped
  • 3 green bell peppers chopped
  • 1 cup sugar
  • 2 tablespoons salt
  • 2 teaspoons ground mustard
  • 1 teaspoon turmeric
  • ยฝ โ€“1 teaspoon black pepper to taste

Instructions

  • Combine vinegar and chopped pears to prevent browning.
  • Combine pears and vinegar with remaining ingredients in a medium saucepan.
  • Bring to a boil over medium heat.
  • Boil gently until thickened, approximately 10โ€“15 minutes.
  • Ladle into clean jars.
  • Process for 20 minutes in boiling-water bath.
